Pumpkin Chai Heavenly Waffles With Salted, Maple, Whipped Butter
Pumpkin Chai Heavenly Waffles
What you’ll need & how much
2 cups club soda ( or you can use sparkling water, or any carbonated beverage)
2 cups Original or GF Heavenly Waffle Mix
3 Tbsp oil (coconut, melted butter, ghee, vegetable, or canola)
2 eggs
½ tsp Chai Spice
2 Tablespoons Brown Sugar
½ tsp Pumpkin Spice
½ cup pure pumpkin puree reduced (once reduced will be approx. ¼ cup) to reduce the pumpkin place it in a skillet until most moisture is removed.
Powder Sugar – sprinkle for garnish
Mixing Instructions:
Step 1. Heat up the waffle iron – it should be very hot before pouring the mix in
Step 2. Reduce the pumpkin puree in a skillet until most moisture is removed
Step 3. While the pumpkin is reducing combine all other ingredients in a blender except pumpkin and powdered sugar
Step 4. Once pumpkin is reduced and cooled add to the blender for one more minute
Step 5. Spray the bottom half of the waffle iron
Step 6 Pour in batter about ¾ full – keep lid open until you start to see bubbles forming on the batter
Step 7 Spray top half of the waffle iron and close
Step 8 Cook 4-6 min until waffles are crispy – Heavenly Waffles tend to look darker but are not burnt.
Step 9 – Spread the Salted, Maple, Butter(see recipe below) over each waffle & enjoy – Chef Bob
Salted Whipped Maple Butter
1 pound of butter
¼ cup maple syrup – or to taste
Pinch of sea salt
Mixing instruction
Whip the butter with a hand mixer until fluffy
Slowly add in the maple syrup – taste to see if more is needed
Add the pinch of salt
Store the butter in a container with a lid
