Jalapeño & Cilantro Heavenly Waffles

Ingredients
Waffle Batter
- 2 cups prepared Heavenly Waffles batter (Original or Gluten Free)
- 1 jalapeño, diced
- ¼ cup diced red onion
- ¼ cup sliced green onions
- ½ bunch cilantro, chopped
- 1 tsp cumin
- 1 tsp chili powder
- 1 tsp coarse kosher salt
Toppings
- 1 lb ground beef, browned and seasoned (dash of cumin, chili powder, kosher salt)
- ½ cup refried black beans
- ½ cup whole black beans
- 1 cup grated pepper jack cheese (divided)
- ¼ cup salsa of your choice
- Butter, for serving
- Fresh cilantro, for garnish
Directions
- In a large mixing bowl, combine prepared Heavenly Waffles batter with jalapeño, red onion, green onions, cilantro, cumin, chili powder, and salt. Stir until well incorporated.
- Heat a skillet and brown the ground beef with a dash of cumin, chili powder, and kosher salt. Keep warm.
- In a small saucepan, mix refried beans, whole black beans, and ½ cup of grated pepper jack cheese. Heat until warmed through and creamy.
- Cook Jalapeño & Cilantro Heavenly Waffles according to package directions until golden brown.
- To assemble: spread butter on the waffles, spoon on bean mixture, top with seasoned ground beef, sprinkle with remaining cheese, add salsa, and garnish with fresh cilantro.
