Jalapeño & Cilantro Heavenly Waffles

Ingredients

Waffle Batter

  • 2 cups prepared Heavenly Waffles batter (Original or Gluten Free)
  • 1 jalapeño, diced
  • ¼ cup diced red onion
  • ¼ cup sliced green onions
  • ½ bunch cilantro, chopped
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1 tsp coarse kosher salt

Toppings

  • 1 lb ground beef, browned and seasoned (dash of cumin, chili powder, kosher salt)
  • ½ cup refried black beans
  • ½ cup whole black beans
  • 1 cup grated pepper jack cheese (divided)
  • ¼ cup salsa of your choice
  • Butter, for serving
  • Fresh cilantro, for garnish

Directions

  1. In a large mixing bowl, combine prepared Heavenly Waffles batter with jalapeño, red onion, green onions, cilantro, cumin, chili powder, and salt. Stir until well incorporated.
  2. Heat a skillet and brown the ground beef with a dash of cumin, chili powder, and kosher salt. Keep warm.
  3. In a small saucepan, mix refried beans, whole black beans, and ½ cup of grated pepper jack cheese. Heat until warmed through and creamy.
  4. Cook Jalapeño & Cilantro Heavenly Waffles according to package directions until golden brown.
  5. To assemble: spread butter on the waffles, spoon on bean mixture, top with seasoned ground beef, sprinkle with remaining cheese, add salsa, and garnish with fresh cilantro.
