Savory Bacon, Chive, Sun Dried Tomato & Cheddar Protein Pancakes

If you think pancakes are only for sweet tooths, think again. This savory stack is loaded with flavor—and protein—making it perfect for brunch, lunch, or even a weeknight dinner. Made with our dry yogurt-based Heavenly Waffles mix, this recipe combines bold ingredients like chives, sun dried tomatoes, Cabot Creamery cheddar, and bacon right into the batter. We used Topo Chico for an extra bubbly base that creates the lightest, fluffiest pancakes ever.
Topped with garlicky sautéed spinach, a crispy fried egg, and extra bacon? This dish is next-level comfort food with a gourmet twist.
Ingredients
For the Pancakes:

1 cup Heavenly Waffles dry mix (original or gluten-free)

1 egg

1 tbsp avocado or MCT oil

1 cup Topo Chico (or your favorite sparkling water)

2 tbsp chopped fresh chives

2 tbsp chopped sun dried tomatoes (oil-packed, drained)

⅓ cup shredded Cabot Creamery cheddar cheese

2 slices cooked bacon, chopped
For the Toppings:

1–2 cups fresh spinach

1 tsp olive oil or butter

1 garlic clove, minced (optional)

2 eggs
-
2 more slices of bacon, cooked

Salt & pepper to taste
Instructions
1. Mix the Batter
In a mixing bowl, combine the Heavenly Waffles dry mix, egg, and oil. Slowly add in the Topo Chico while stirring until just combined. Don’t over mix—tiny bubbles = fluffy pancakes!
Fold in the chives, sun dried tomatoes, cheddar, and chopped bacon. Let the batter rest for 2–3 minutes.
2. Cook the Pancakes
Heat a non-stick skillet or griddle over medium heat and lightly grease with oil or butter. Pour ¼ cup of batter per pancake onto the pan. Cook for about 2–3 minutes until bubbles form on the surface and the edges are set, then flip and cook another 1–2 minutes until golden.
Transfer to a warm plate and cover lightly with foil while you finish the batch.
3. Sauté the Spinach
In the same skillet, add olive oil and garlic. Sauté for 30 seconds, then add spinach and cook until wilted, about 1–2 minutes. Season lightly with salt and pepper.
4. Fry the Eggs
Crack eggs into the skillet and cook to your liking (we recommend sunny side up or over-easy for that runny yolk goodness).
5. Assemble & Serve
Stack the savory pancakes, top with sautéed spinach, a fried egg, and a slice of crispy bacon. Garnish with extra chives or a sprinkle of cheese if desired.
