High Protein BLT Heavenly Waffles Sandwich

This High Protein BLT Heavenly Waffles Sandwich is not your average breakfast — it’s packed with flavor and fuel. Made with Heavenly Waffles Original or Gluten-Free mix, crispy bacon, summer sausage, a fried egg, and homemade mayo, this powerhouse sandwich is perfect for brunch, post-workout meals, or anytime you need a savory protein boost.

Ingredients

For the Waffle Sandwich

  • 2 cups Heavenly Waffles dry mix (Original or Gluten-Free)
  • 1 ½ cups sparkling water (or club soda)
  • 1 tbsp avocado or olive oil
  • 1 egg

Filling

  • 2 slices of bacon
  • 2 pieces of summer sausage
  • 1 large egg
  • Lettuce leaves
  • Tomato slices
  • 1 tbsp shredded extra sharp white cheddar
  • 1 tbsp homemade mayo (see below)

Directions

  1. Prepare the Waffles

  • In a bowl, whisk together Heavenly Waffles mix, sparkling water, oil, and egg until smooth.
  • Pour batter into the waffle iron, filling only halfway to create thinner sandwich-style waffles. Cook until golden brown and crisp.
  1. Cook the Fillings

  • In a skillet, cook bacon and summer sausage until browned and crisp.
  • Fry or scramble the egg as desired.
  1. Prep the Toppings

  • Wash and slice lettuce and tomato. Shred cheddar cheese.
  1. Assemble the Sandwich

  • Spread homemade mayo on one waffle.
  • Layer lettuce, tomato, bacon, sausage, and egg.
  • Sprinkle shredded cheddar and top with the second waffle.

Homemade Mayo Recipe

Ingredients

  • 2 egg yolks
  • ⅔ cup avocado oil
  • ½ lemon, juiced
  • 1 tsp Redmond Real kosher salt

Directions

  1. Whisk egg yolks in a medium bowl.
  2. Slowly drizzle in avocado oil, whisking continuously so the mixture emulsifies and thickens.
  3. Add half the lemon juice midway through, and the rest at the end.
  4. Season with salt to taste.
