Heavenly Waffles Pumpkin Chocolate Chip Muffins - Moist, fluffy, delicious!

Bottoms Up Heavenly Waffle Muffins

What you'll need & how much:

1/3 cup brown sugar

1/3 cup white sugar

1 cup club soda or

3 eggs

2 Cups Heavenly Waffle Mix

1 tsp baking powder

1tsp vanilla paste - you can use regular vanilla if you do not have paste

1 tsp baking soda

1 Tablespoon pumpkin spice

2 cups chocolate chips

½ Cup reduced pumpkin puree (Libby's)

 

Mixing Instructions

Step 1. Pre heat oven to 375

Step 2.  Reduce the pumpkin puree in a skillet until most moisture is removed. 

Step 3. While the pumpkin is reducing combine all other ingredients in a blender except the Chocolate Chips.  

Step 4. Add the reduced pumpkin puree and blend on high for approx 1 min until all ingredients are blended

Step 5. Spray  or butter/flour mini muffin pans

Step 6.  Pour the batter into mini muffin pans, filling about 3/4 full- yields approx 36-48 mini muffins

Step 7. Bake 375 top rack for approx 25 Min

Step 8. Take out & turn upside down chocolate chips on top

Step 9. Enjoy
